My mother used to make these cookies. The dough is so good that the actual cookie yield was as low as 50%, much to her dismay.
1 cup Shorrtening or butter
1 cup Brown sugar
1 cup Sugar
2 Eggs, well-beaten
1 tsp Vanilla
1 ½ cups Enriched flour, sifted
1 tsp Salt
1 tsp Baking soda
3 cups Quick cooking oats
½ cup Chopped walnuts
1
Thoroughly cream butter and sugars.
2
Add eggs and vanilla.
3
Add dry ingredients and mix.
4
Add oats and nuts and mix.
5
Shape into squarish logs, about 1" x 1 1/2" and wrap in waxed paper.
6
Place in fridge or freezer and allow to chill completely.
7
Slice into 1/4" thicknesses.
8
Place on greased cookie sheet and bake in a 350 F oven for 10 minutes.
